Butter
(softened)
Alternative: vegan butter
- 175 g Caster sugar

Eggs
(beaten)
Alternative: flax egg
- 225 g Plain flour
- 1 tsp baking powder
- 2 piece Ripe bananas (mashed)
- 1 tsp vanilla extract
- 50 g Walnuts (chopped)
Instructions

Heat oven to 180C. Grease and line a 2lb loaf tin.

Cream butter and sugar together until light and fluffy.

Beat in the eggs one at a time, then stir in mashed bananas and vanilla extract.

Fold in flour and baking powder until just combined. Stir in walnuts.

Spoon mixture into prepared tin and level the top.

Bake for 50-55 minutes until golden and a skewer inserted comes out clean.

Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
