Ingredients
- 2 piece baking potato
- 1 tbsp Sunflower oil
- 1 piece Broccoli

Unsalted butter
Alternative: plant-based butter

Cheddar cheese
Alternative: vegan cheese slice
Instructions

Preheat the oven to 200°C. Prick the potatoes and rub with sunflower oil and salt.

Bake the potatoes for 1 hour, or until soft.

Meanwhile, steam or boil the broccoli until just tender.

Halve the baked potatoes and scoop out the flesh, leaving a 1cm border.

Mash the potato flesh with the butter and season.

Stir through the broccoli and cheddar.

Pile the mixture back into the potato skins.

Bake for a further 10 minutes, or until golden and the cheese has melted.
