Cheesy Broccoli Stuffed Potatoes - British Main Course

Ingredients

  • 2 piece baking potato
  • 1 tbsp Sunflower oil
  • 1 piece Broccoli
  • 25 g Unsalted butter
    Alternative: plant-based butter
  • 50 g Cheddar cheese
    Alternative: vegan cheese slice

Instructions

  1. Preheat the oven to 200°C. Prick the potatoes and rub with sunflower oil and salt.

  2. Bake the potatoes for 1 hour, or until soft.

  3. Meanwhile, steam or boil the broccoli until just tender.

  4. Halve the baked potatoes and scoop out the flesh, leaving a 1cm border.

  5. Mash the potato flesh with the butter and season.

  6. Stir through the broccoli and cheddar.

  7. Pile the mixture back into the potato skins.

  8. Bake for a further 10 minutes, or until golden and the cheese has melted.
