Easy Halloumi Burgers - British Main course

Ingredients

Ingredients for Easy Halloumi Burgers
  • 2 tbsp Olive oil (olive oil)
  • 2 piece Mushroom (Portobello mushrooms, wiped clean and stalks removed)
  • 200 g Halloumi (halloumi cheese, thickly sliced)
  • 2 piece Burger buns (brioche buns, cut in half)
  • 2 tbsp Onion (finely chopped onion)
  • 2 tbsp Tomato (finely chopped tomato)
  • 2 tbsp Cucumber (finely chopped cucumber)
  • 2 tbsp Fresh mint (finely chopped fresh mint)
  • 1 piece Lime (Lime)
  • 200 g Halloumi (halloumi cheese, thickly sliced)
    Alternative: Vegan feta cheese

Instructions

  1. Brush the mushrooms with 1 tbsp olive oil and season.

  2. Grill or barbecue the mushrooms for 5 minutes on each side, or until tender.

  3. Brush the halloumi with the remaining olive oil and grill or barbecue for 2-3 minutes on each side, or until golden-brown.

  4. Lightly toast the cut sides of the brioche buns.

  5. Squeeze lime juice over the mushrooms.

  6. Fill each bun with a grilled mushroom, halloumi, onion, tomato, cucumber and mint.

  7. Serve immediately.
