Ingredients
- 2 tbsp Olive oil (olive oil)
- 2 piece Mushroom (Portobello mushrooms, wiped clean and stalks removed)
- 200 g Halloumi (halloumi cheese, thickly sliced)
- 2 piece Burger buns (brioche buns, cut in half)
- 2 tbsp Onion (finely chopped onion)
- 2 tbsp Tomato (finely chopped tomato)
- 2 tbsp Cucumber (finely chopped cucumber)
- 2 tbsp Fresh mint (finely chopped fresh mint)
- 1 piece Lime (Lime)

Halloumi
(halloumi cheese, thickly sliced)
Alternative: Vegan feta cheese
Instructions

Brush the mushrooms with 1 tbsp olive oil and season.

Grill or barbecue the mushrooms for 5 minutes on each side, or until tender.

Brush the halloumi with the remaining olive oil and grill or barbecue for 2-3 minutes on each side, or until golden-brown.

Lightly toast the cut sides of the brioche buns.

Squeeze lime juice over the mushrooms.

Fill each bun with a grilled mushroom, halloumi, onion, tomato, cucumber and mint.

Serve immediately.
