Mexican Bisquets (Biscuits) - Mexican Baking

Ingredients

  • 500 g All-purpose flour (All-purpose flour)
  • 120 g Butter (Cold butter, diced)
  • 250 ml Milk (Whole milk, cold)
  • 50 g Granulated sugar (Granulated sugar)
  • 5 g Salt (Salt)
  • 7 g dried yeast (Dried yeast)
  • 1 piece Eggs (Egg, for brushing)
  • 120 g plant-based butter (Plant-based butter)

  • 120 g vegan butter (Vegan butter)

  • 250 ml plant-based mince (Plant-based milk)
    Alternative: Milk
  • 1 piece vegan mayonnaise (Vegan egg wash substitute)
    Alternative: Eggs

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast.

  2. Add diced cold butter and rub with fingertips until mixture looks like coarse crumbs.

  3. Pour in cold milk and mix gently until a soft dough forms. Do not overmix.

  4. Place dough on a floured surface and knead lightly for 1-2 minutes.

  5. Roll out dough to 2 cm thickness. Fold it in thirds (like a letter) and roll again. Repeat twice for flakiness.

  6. Cut dough with a round cutter and place on a lined baking tray.

  7. Brush tops with beaten egg (or vegan alternative).

  8. Bake in a preheated oven at 200°C (390°F) for 20-25 minutes until golden brown.

  9. Serve warm with butter, jam, or honey.
