- 4 piece Burger buns (sesame-topped or brioche)

mild cheddar
(or burger cheese)
Alternative: vegan cheese slice
- 1 piece red onion (finely sliced)
- 2 handful iceberg lettuce (finely shredded)
- 2 piece Tomato (sliced)
- 1 piece gherkin (pickled cucumber) (large, sliced lengthways)
For cooking
- 1 tbsp Sunflower oil
Patties

beef mince
Alternative: plant-based mince
- 1 to_taste Salt (generous seasoning for patties)
Sauces

1 to_taste
mayonnaise
Alternative: vegan mayonnaise
- 1 to_taste ketchup
- 1 to_taste American mustard
Instructions

Split the burger buns and toast or grill the cut sides. Heat oven to 100°C (80°C fan). Set a baking tray inside to keep cooked patties warm.

Divide the beef mince into 4 loose piles and season generously with salt. Heat 1/4 tbsp oil in a heavy pan over high heat; add one pile.

Cover the meat with baking parchment and press down firmly with a smaller pan to smash into a thin patty. Cook 2 minutes for a deep crust.

Remove parchment, flip, press with a spatula, top with a cheese slice and cook 1 minute. Transfer to the warm oven; repeat for remaining patties.

Assemble each burger: bun base, onion, shredded lettuce, tomato, smashed patty, gherkin slices, sauces to taste, then bun top. Serve immediately.
