Cucumber Small Rolls (Kappa Maki) - Japanese Appetizer

Ingredients

  • 250 g sushi rice
  • 3 tbsp rice vinegar
  • 1 tbsp Caster sugar
  • 0.5 tsp Salt
  • 4 sheet nori sheets
  • 1 piece Cucumber (cut into long thin strips)
  • 4 tbsp soy sauce (to serve)
  • 2 tsp wasabi (to serve)
  • 50 g pickled ginger (to serve)

Instructions

  1. Cook sushi rice according to package instructions. Allow to cool slightly.

  2. Mix rice vinegar, sugar, and salt, then stir into the rice while still warm.

  3. Lay a nori sheet on a bamboo sushi mat. Spread an even layer of seasoned rice, leaving a 2cm border at the top edge.

  4. Lay cucumber strips across the rice. Roll tightly using the sushi mat, sealing with the border.

  5. Slice the roll into 6-8 small pieces with a sharp knife.

  6. Serve with soy sauce, wasabi, and pickled ginger.
