- 0.5 piece Onion (finely grated)
- 2 clove Garlic (minced)
- 2 tsp dried oregano
- 2 tsp ground cumin
- 2 tsp paprika
- 0.25 tsp Cayenne pepper (or to taste)
- 2 tsp Salt
- 1 tsp Black pepper
- 0.5 cup Breadcrumbs

Grate the onion finely using a box grater, or mince very finely in a food processor. Squeeze out excess liquid.

Combine all ingredients in a bowl. Mix very well using hands for at least 3 minutes until it becomes a smooth paste. This is key for a good kebab texture.

Shape into a loaf on a tray lined with parchment paper. Ensure there are no air pockets by pressing firmly and evenly.

Bake in a preheated oven at 180°C (350°F) for 1 hour, or until the internal temperature reaches 75°C (165°F).

Let the meat cool slightly before slicing thinly. Serve in pita bread with your favorite toppings and sauces.
