Doner Kebab Meat - Turkish

Ingredients

  • 500 g beef mince
  • 500 g Lamb mince
    Alternative: beef mince
  • 0.5 piece Onion (finely grated)
  • 2 clove Garlic (minced)
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 0.25 tsp Cayenne pepper (or to taste)
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 0.5 cup Breadcrumbs

Instructions

  1. Grate the onion finely using a box grater, or mince very finely in a food processor. Squeeze out excess liquid.

  2. Combine all ingredients in a bowl. Mix very well using hands for at least 3 minutes until it becomes a smooth paste. This is key for a good kebab texture.

  3. Shape into a loaf on a tray lined with parchment paper. Ensure there are no air pockets by pressing firmly and evenly.

  4. Bake in a preheated oven at 180°C (350°F) for 1 hour, or until the internal temperature reaches 75°C (165°F).

  5. Let the meat cool slightly before slicing thinly. Serve in pita bread with your favorite toppings and sauces.
