Ingredients
- 125 g Unsalted butter
- 125 g Golden caster sugar
- 1 piece Eggs
- 1 tsp vanilla extract
- 250 g Plain flour
- 50 g Popping candy
Instructions

Heat oven to 200C/180C fan/gas 6. Line 2 baking sheets with baking parchment.

Beat the butter and sugar together until light and fluffy. Beat in the egg and vanilla extract.

Gradually mix in the flour until you have a smooth dough. Roll the dough out on a lightly floured surface to a thickness of 5mm.

Using a ghost-shaped cutter, cut out 16 ghosts. Using a smaller cutter, cut a hole in the centre of 8 of the ghosts.

Bake for 8-12 mins, or until golden brown. Leave to cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.

Once the biscuits are cold, arrange the biscuits with holes on top of the whole biscuits. Fill with popping candy. Sandwich together with a little icing.
