Instructions

Boil the quail eggs for 5 minutes. Cool, peel, and halve them.

Thinly slice the onions.

Peel the orange, remove the segments, and set aside.

In a bowl, whisk together the cream, mustard, olive oil, salt, and pepper to create a dressing.

Gently combine the sliced onions, sorrel, smoked trout, quail eggs, and orange segments.

Dress the salad with the prepared dressing and serve immediately.
