Rhubarb Chutney - British

Ingredients

  • 2 tbsp Vegetable oil
  • 1 piece Banana shallot
  • 2 clove Garlic
  • 2 cm Fresh ginger
  • 400 g Rhubarb
  • 1 piece Star anise
  • 1 piece Cinnamon stick
  • 100 ml white wine vinegar
  • 125 g Soft brown sugar

Instructions

  1. Heat the oil in a large saucepan. Add the shallot, garlic, ginger, and rhubarb. Cook for 3-5 minutes.

  2. Add the star anise, cinnamon, juniper berries, vinegar, and sugar. Cook for 15-20 minutes, or until cooked down and soft.

  3. Decant into jars and let cool before serving.
