Ingredients
- 2 tbsp Vegetable oil
- 1 piece Banana shallot
- 2 clove Garlic
- 2 cm Fresh ginger
- 400 g Rhubarb
- 1 piece Star anise
- 1 piece Cinnamon stick
- 100 ml white wine vinegar
- 125 g Soft brown sugar
Instructions

Heat the oil in a large saucepan. Add the shallot, garlic, ginger, and rhubarb. Cook for 3-5 minutes.

Add the star anise, cinnamon, juniper berries, vinegar, and sugar. Cook for 15-20 minutes, or until cooked down and soft.

Decant into jars and let cool before serving.
