Ingredients
- 250 g sushi rice
- 3 tbsp rice vinegar
- 1 tbsp Caster sugar
- 0.5 tsp Salt
- 4 sheet nori sheets

smoked salmon
(sliced)
Alternative: tofu
- 1 piece Avocado (sliced)
- 0.5 piece Cucumber (cut into strips)
- 4 tbsp soy sauce (to serve)
- 2 tsp wasabi (to serve)
- 50 g pickled ginger (to serve)
Instructions

Cook sushi rice according to package instructions. Allow to cool slightly.

Mix rice vinegar, sugar, and salt, then stir into the warm rice.

Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of seasoned rice, leaving a 2cm border at the top edge.

Arrange smoked salmon, avocado, and cucumber strips across the rice.

Roll up tightly using the sushi mat, sealing with the border.

Slice into 6-8 pieces with a sharp knife.

Serve with soy sauce, wasabi, and pickled ginger.
