Basil & Lemon Chicken Meatballs - Italian Main Course

Ingredients

  • 500 g Ground chicken
    Alternative: Ground turkey
  • 0.5 cup Breadcrumbs
  • 1 piece Eggs
  • 2 clove Garlic (minced)
  • 0.25 cup Basil (chopped)
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Parmesan cheese (grated)
  • 4 piece Lemon (for serving)

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, egg, garlic, lemon zest, basil, salt, pepper, and Parmesan until just combined.

  2. Shape mixture into 16 small meatballs.

  3. Heat olive oil in a large skillet over medium heat. Fry meatballs in batches, turning occasionally, until golden and cooked through, 12-15 minutes.

  4. Serve warm, garnished with extra basil and lemon wedges.
