Ingredients
- 115 g Cheddar cheese
- 120 g All-purpose flour
- 0.25 tsp Salt
- 85 g Unsalted butter (cold, cut into cubes)
- 4 tbsp Ice water
Instructions

In a food processor, pulse together cheddar cheese, flour, and salt until finely ground.

Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.

Add ice water and pulse until the dough just comes together.

Turn the dough out onto a lightly floured surface and form into a disc. Wrap in plastic wrap and chill for at least 30 minutes.

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll the dough out to about 1/8-inch thickness. Use cookie cutters to cut out desired shapes.

Place the crackers on the prepared baking sheet and bake for 8-10 minutes, or until golden brown.

Let the crackers cool completely on the baking sheet before serving.
