Easiest Ever Paella - Spanish Main Dish

Ingredients

  • 2 tbsp Olive oil
  • 1 piece Onion (chopped)
  • 2 clove Garlic (crushed)
  • 1 piece Red bell pepper (sliced)
  • 2 tsp smoked paprika
  • 250 g paella rice
  • 0.25 tsp saffron
  • 600 ml chicken stock
    Alternative: Vegetable stock
  • 200 g Chicken thigh (boneless, chopped)
    Alternative: tofu
  • 100 g chorizo (sliced)
    Alternative: vegan sausage
  • 150 g Prawns (peeled)
    Alternative: jackfruit
  • 100 g Peas (frozen)
  • 4 piece Lemon (to serve)

Instructions

  1. Heat olive oil in a wide frying pan. Sauté onion, garlic, and red pepper for 5 minutes until softened.

  2. Stir in smoked paprika, paella rice, and saffron. Cook for 1 minute to coat.

  3. Pour in chicken stock or vegetable stock. Simmer uncovered for 15 minutes, stirring occasionally.

  4. Add chicken, chorizo, and prawns (or tofu, vegan sausage, and jackfruit). Cook for another 15-20 minutes until rice is tender and proteins are cooked.

  5. Stir in peas for the last 5 minutes of cooking.

  6. Season to taste and serve with lemon wedges.
