Ingredients
- 4 piece Chicken breast
- 400 g Butter beans (canned, drained)
- 100 g chorizo (cooking chorizo, sliced)
- 150 ml red wine
- 200 g Green beans (to serve)
- 1 tbsp Olive oil
- 1 piece Onion (chopped)
- 2 clove Garlic (cloves, crushed)
- 400 g Chopped tomatoes
- 200 ml chicken stock
- 1 pinch Salt (to taste)
- 1 pinch Black pepper (to taste)
Instructions

Heat the olive oil in a large pan over a medium heat. Add the onion and cook for 5 minutes, or until softened.

Add the garlic and chorizo and cook for a further 3 minutes.

Add the chicken breasts and cook for 5 minutes on each side, or until browned.

Pour in the red wine and cook for 2 minutes, or until reduced slightly.

Add the chopped tomatoes and chicken stock. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.

Stir in the butter beans and cook for a further 5 minutes, or until heated through.

Serve with green beans.
