Garlic and Oil Pasta - Italian Main Course

Ingredients

  • 320 g Spaghetti
  • 4 clove Garlic (minced)
  • 4 tbsp Parmesan cheese (grated)
  • 2 tbsp Parsley (chopped)
  • 6 tbsp Olive oil
  • 1 pinch Espelette pepper
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 4 tbsp Parmesan cheese (grated) (For vegan option)
    Alternative: nutritional yeast

Instructions

  1. Cook spaghetti according to package directions until al dente.

  2. While pasta cooks, heat olive oil in a large pan over low heat.

  3. Add minced garlic to the pan and cook until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

  4. Drain the spaghetti, reserving about 1/2 cup of pasta water.

  5. Add the spaghetti to the pan with the garlic oil. Toss to coat.

  6. Add a pinch of Espelette pepper, salt, and black pepper. Toss again.

  7. If the pasta seems dry, add a little of the reserved pasta water.

  8. Serve immediately, garnished with grated Parmesan cheese and chopped parsley.
