Instructions

In a saucepan, combine coconut milk, milk, semolina, and sugar.

Bring to a boil over medium heat, stirring constantly to prevent sticking.

Reduce heat to low and simmer for 10-15 minutes, or until the semolina is cooked and the pudding has thickened, stirring frequently.

Remove from heat and stir in shredded coconut and butter until melted and well combined.

Pour the pudding into serving bowls and let cool slightly before serving. Serve warm or cold.
